Blueberry and Apple Muffins

reduced fat milk

Finely grated rind of 1 orange
2 cups 
SR flour
1/2 cup 
wholemeal SR flour
1/3 cup 
caster sugar

Granny Smith apple, grated
1/2 cup 
blueberries

tub PHILADELPHIA Light Spreadable Cream Cheese
  1. WHISK together the milk, eggs, juice and rind.
  2. COMBINE dry ingredients and fruit in a large bowl. Make a well in the centre. Add milk mixture and mix until just combined. Spoon into 12 lightly oiled 1/2 cup capacity muffin pans and bake at 200ºC for 15-20 minutes until cooked.
  3. WHEN cool, halve and spread with Philly*.
