MELT butter in a large non-stick frying pan. Add brown sugar and pears and cook over medium heat for 5 minutes or until golden. Set aside to cool.
CUT the full sheet of pastry into quarters and cut the remaining sheet in half to form a total of 6 squares. Top the centre of each pastry square with combined Philly* and blue cheese. Top with pears and sprinkle with walnuts.
FOLD in pastry sides half way into the centre to leave some pear exposed. Place onto a greased tray and bake at 200°C for 5-8 minutes or until golden.
