PLACE the dates, ginger and bi-carb in a bowl. Pour 1 cup boiling water over the top and stand for 10 minutes.
COMBINE the flour, sugar and spice. Fold in the date mixture and beaten egg. Pour into a lined 20 x 10 cm loaf pan. Bake at 180ºC for 40-45 minutes or until an inserted skewer comes out clean. Allow to cool on a cake rack.
CUT into slices and serve spread with some Philly*.
