Cheese And Kraft
The first dairy cows came to Australia in 1788 with Captain Phillip and the First Fleet. They brought with them seven cows and two bulls.

All these animals supply milk that can be used to make cheese:

  • Sheep
  • Water Buffalo
  • Horses
  • Llamas
  • Yaks
  • (Note: Kraft Australia only uses cow's milk)

Cheese is made from the semi-solid 'curds' that form when milk sours either naturally or because of added ingredients. The watery liquid left behind is called 'whey'. Who sat 'eating her curds and whey' ?

There are over 105 different types of cheese made in Australia today.

  • The most popular dairy cow is the Fresian Holstien
  • 60% of Australian dairy farms are in Victoria

Where does cheese come from?
Most of the cheese you buy at the supermarket comes from cows' milk. The cows live on 'Dairy Farms' and there are approximately 13,200 dairy farms across Australia today. Approximate figures by state:

  • Victoria- 7,950
  • NSW- 1,800
  • Qld- 1,600
  • SA- 700
  • WA- 400
  • Tasmania- 750
Seventy percent (70%) of dairy cows in Australia are a breed called Fresian Holstein, which are particularly good at producing milk. Other popular breeds are the Jersey cow and an Australian breed called the Illawarra.
