How To Soak Them

Utensils/Equipment:
Airtight Container, Small Bowl, Paper Towels, And Small Sieve

 
When purchasing dried mushrooms, look for large pieces that are free of holes. Dried mushrooms can be stored in an airtight container in the pantry for up to one year. Place dried mushrooms in a small bowl. Pour enough hot water over them to just cover. Let stand until the mushrooms are softened, 15 to 30 minutes is usually enough time.

Remove mushrooms from the soaking liquid with your hands and squeeze the water from them. This should leave most of the grit behind.

Wipe the mushroom pieces with a paper towel to remove any remaining grit.

The soaking liquid can be used to flavour stocks, soups and sauces. Strain the liquid through a fine-mesh sieve or a coffee filter to remove any grit that came off of the mushrooms.
